This dish works great as a vegetable side dish to serve alongside an entrée.  It can also be added directly to a noodle or rice dish to provide a fresh textural element and an extra depth of flavor.


  1. Combine cucumbers and sliced scallions in a large mixing bowl and set aside.
  2. In a separate small bowl, combine vinegar, soy sauce, salt, and sugar and stir until the salt has dissolved in the liquid and all the ingredients are thoroughly combined.
  3. Pour the liquid over the cucumbers and scallions, sprinkle the gochutgaru and sesame seeds over the top, and mix until thoroughly combined.
