  1. To make the dressing, combine the garlic and lemon juice in a medium-sized bowl.
  2. Gradually add the olive oil to the lemon juice mixture while constantly whisking and set aside.
  3. In a large bowl, combine the kale, apples, almonds, jalapeño, and mix thoroughly.
  4. Gradually add the dressing to the larger bowl, season with salt and pepper, and mix thoroughly until the entire salad has been thoroughly coated.
  5. Finish the salad with freshly grated parmesan cheese.
